Gluten Free Bread At Panera Bread

I love Panera Bread, but they need some gluten free bread options.
One of the things that makes Panera Bread different from most restaurants is the quality and variety of freshly baked breads they carry. Obviously, with a name like Panera Bread, that's exactly what you would expect, a wide variety of bread.
For a company that specializes in making a wide variety of breads, it's odd that gluten free bread isn't an option.
Adding gluten free breads to their menu would immediately increase sales. Every time a large restaurant chain adds gluten free options to their menu, they get a big boost in sales from families with people who are on a gluten restricted diet, who otherwise wouldn't eat there in the first place. As restaurants add gluten free options, word spreads quickly as customers share the news with other gluten restricted people both online and offline.
For Panera Bread, adding gluten free bread options would have even bigger impact because the most important thing people on a gluten restricted diet want is FRESH gluten free bread.
There are a lot of restaurants that carry gluten free bread, but most of them use frozen bread because they don't bake their own bread.
Frozen gluten free bread is better than nothing, but it doesn't compare to the taste and texture of freshly baked gluten free bread. Because Panera Bread bakes all their bread fresh each day, they could become the only major restaurant that serves fresh gluten free bread.
I realize they are concerned with cross contamination, but they can resolve this just like other restaurants have by using a variety of safeguards, including isolated work areas, dedicated equipment and utensils, and insuring their staff is trained to use them.
The most important reason Panera Bread should consider adding gluten free bread options is that if they don't, somebody else will beat them to it.
